Crunchies Honey, Almond, Berry Granola with Greek Yogurt

Add some crunch to your morning with this granola recipe. It’s a great way to dress up Greek yogurt, while still benefitting from plenty of protein, probiotics, and vitamin B12.


INGREDIENTS

1 cup almonds
3 cups old fashioned oats
½ teaspoon sea salt
cup light brown sugar
cup honey
3 tablespoons coconut oil
½ teaspoon vanilla extract
  cup dark chocolate chunks
¼ cup Crunchies fruit (strawberries, blueberries, raspberries)
¾ Vanilla Greek yogurt for serving

DIRECTIONS
Step 1: Preheat oven to 350 degrees Fahrenheit.

Step 2: In a blender, blend 1/2 cup of the almonds until finely chopped (but not powdery).

Step 3: Finely chop the remaining 1/2 cup of almonds with a knife.

Step 4: Combine the oats, salt, and brown sugar with the almonds in a bowl, and stir to combine.

Step 5: Combine honey and coconut oil in a microwave safe bowl, and heat in the microwave for 45 seconds. Stir to combine, and then add the vanilla.

Step 6: Pour the honey mixture over the oats, and toss until well coated.

Step 7: Spread the oats evenly on a parchment lined baking sheet. Bake the oats for 5 minutes, and stir them. Then bake them again for an additional 5 minutes.

Step 8: Remove the granola and parchment paper from the baking sheet, and set aside to cool. Once completely cool, you can break the granola into clusters.

Step 9: Add in your favorite Crunchies fruit and some dark chocolate chunks.

Step 10: Serve over vanilla Greek yogurt, and store the remaining granola in an airtight container.
