Avocado Toast with Poached Egg

Avocados are an amazing super food — full of vitamin K, folate, vitamin C, potassium, vitamin B5, vitamin B6, vitamin E, fiber, and monounsaturated fats. So, a little avocado at breakfast will fortify your diet.
INGREDIENTS
1 | slice of whole wheat bread |
½ | Avocado |
¼ | teaspoon salt |
1 | egg |
⅓ | cup of water |
½ | teaspoon vinegar |
DIRECTIONS
Step 1: Toast the whole wheat bread.
Step 2: In a small bowl, mash the avocado with salt. Spread the mixture over the toast.
Step 3: Crack the egg into a microwave-safe mug, and add the water and vinegar. Do not stir.
Step 4: Microwave the egg, water, and vinegar for 1 minute at 50 percent power, and check for doneness. Microwave at 50 percent power for 20 seconds at a time until the egg is cooked to your desired doneness.
Step 5: Using a slotted spoon or fork, remove the egg from the water, and place on top of the avocado toast.
