My kids love the rich taste of Greek Yogurt Popsicles, and I love that they’re getting a little protein too. What a fun frozen treat … so creamy and flavorful. Our two favorite versions have been Peanut Butter Chocolate Chip and Toasted Coconut Cream. You and your kids can let your imaginations run wild as you discover other yummy creations.

Toasted Coconut Cream Popsicles
Makes 10 Popsicles 

 

INGREDIENTS

3 (5-ounce) containers coconut-flavored Greek yogurt
2 cups toasted coconut (see step 2)
10 wooden popsicle sticks

 

DIRECTIONS
STEP 1: The popsicle molds should be at room temperature before assembling. Spray the inside of each mold with nonstick cooking spray. Set them aside.

STEP 2: To toast the coconut, add sweetened, flaked coconut to a clean, dry skillet and toast for about 1 or 2 minutes over medium-high heat. Remove from the skillet and cool for 1 or 2 more minutes.

STEP 3: In a mixing bowl, combine the Greek yogurt and 1-½ cups of toasted coconut with a spoon.

STEP 4: Pour the mixture into the molds, leaving an inch on top. Lightly add the rest of the toasted coconut to the tops of each mold. (When you invert them, the toasted coconut will be at the bottom as pictured.)

STEP 5: Pop the molds into the freezer and freeze for 1 hour. After 1 hour, place a wooden stick inside each mold. Continue to freeze at least 7 hours before removing.

STEP 6: When ready to serve, run your sink until the water is very hot. Holding the mold, place the bottom portion under the hot water about 20 to 30 seconds. After that, you should be able to grab the sticks and easily remove each popsicle. If they’re not coming out easily, run the bottom of the mold under hot water a few seconds more.

Peanut Butter Chocolate Chip Popsicles
Makes 10 Popsicles

1-½ cups creamy peanut butter
1 cup semi-sweet chocolate chips
10 wooden popsicle sticks

DIRECTIONS
STEP 1: The popsicle molds should be at room temperature before assembling. Spray the inside of each mold with nonstick cooking spray. Set them aside.

STEP 2: In a mixing bowl, combine the Greek yogurt and peanut butter with a spoon. Stir in the chocolate chips.

STEP 3: Pour the mixture into the molds, leaving an inch on top.

STEP 4: Pop the molds into the freezer and freeze for 1 hour. After 1 hour, place a wooden stick inside each mold. Continue to freeze at least 7 hours before removing.
